Crispy Pan-Seared Salmon Fillets
A well-cooked pan-seared salmon should feature crisp, crackling skin, juicy and tender flesh cooked to a medium-rare center, and fully rendered fat beneath the skin. Achieving this balance can be challenging because the skin may stick, the fish can overcook quickly, and the fat layer under the skin can turn greasy. With the correct method, however, these issues are easy to avoid.

NYC Good News
A well-cooked pan-seared salmon should feature crisp, crackling skin, juicy and tender flesh cooked to a medium-rare center, and fully rendered fat beneath the skin. Achieving this balance can be challenging because the skin may stick, the fish can overcook quickly, and the fat layer under the skin can turn greasy. With the correct method, however, these issues are easy to avoid.
The main principle is to cook most of the salmon on the skin side. This shields the delicate flesh from direct heat while allowing the skin to crisp properly. When done correctly, the result is simple, elegant, and consistently excellent.
Selecting High-Quality Salmon
Choose salmon fillets that look bright, firm, and fresh, with shiny skin and springy flesh. When pressed gently, the fish should bounce back—if it leaves a dent or fingerprint, it is no longer at its best quality.
Varieties such as king salmon, coho, or sockeye all work well. Center-cut portions tend to cook most evenly and look the most attractive in the pan, though other cuts are still suitable. A portion size of around five to six ounces per person is typical.
Drying and Seasoning Properly
To prevent sticking, begin by thoroughly drying the salmon. Use paper towels to blot both the flesh and the skin. Any surface moisture can cool the pan too quickly and interfere with proper searing.
Once dry, season both sides generously with salt and black pepper. If time allows, salting the fish 45 minutes or more in advance and letting it rest in the refrigerator can improve texture and moisture retention. If you are short on time, season just before cooking to avoid excess liquid being drawn out by the salt.
Heating the Oil Correctly
Warm a thin layer of oil in a heavy skillet such as stainless steel, cast iron, or carbon steel over medium-high heat until it becomes shimmering and fluid.
This step is crucial. If the fish is placed in a cold pan, the skin may bond to the metal surface and tear when flipped. Proper preheating helps the proteins set immediately and prevents sticking.
Before adding the fish, reduce the heat slightly to medium-low. This prevents the exterior from overcooking while the inside finishes gently.
Placing and Pressing the Salmon
Gently lay the salmon into the pan, skin side down, lowering it away from your body to avoid splattering hot oil. Place it carefully rather than dropping it in.
Once the fish is in the pan, press down lightly but firmly for about 10 seconds using a flexible spatula. This keeps the skin flat against the surface so it cooks evenly instead of curling. If cooking multiple pieces, repeat this process one at a time.
Cooking Mainly on the Skin Side
Most of the cooking should happen with the skin facing down. The layer of fat beneath the skin acts as insulation and must be rendered properly to achieve crispness.
Cook until the salmon is about 90 percent done on the skin side. For a tender, slightly translucent center, the internal temperature should reach about 49°C (120°F). This usually takes around six minutes for a standard fillet.
When done correctly, the skin will be crisp and easy to release from the pan. Carefully flip using a spatula, possibly supported by a second utensil, taking care not to tear the fish or splatter oil.
Finishing, Resting, and Serving
After flipping, cook the salmon on the second side very briefly—around 15 seconds is enough since most of the cooking is already complete.
Remove the fish from the pan and place it on a paper towel–lined plate to absorb excess oil. Let it rest for a couple of minutes before serving.
The finished salmon should be crisp-skinned, moist inside, and rich in flavor—exactly how perfectly pan-seared fish should be.

Mass Seabird Deaths Warning Of Deep Trouble For Arctic Ecosystems
Seabirds represent a joyful sign of spring in the Arctic region. The quiet coastal areas quickly transform into busy hubs of movement. Gulls and puffins arrive in massive numbers to breed. They raise their young during the summer months before flying away again. However, the early months of 2026 brought a devastating sight. Thousands of dead or dying seabirds washed up along the Atlantic shores of Western Europe. Many of these creatures were supposed to migrate north this spring. Experts have already counted over ten thousand dead puffins. The actual number of deaths is likely much higher because these birds spend their winter far out in the open ocean. Scientists refer to these mass mortality events as wrecks. They blame severe winter storms for exhausting the birds and cutting off their food supply. Senior scientists report that these creatures are facing unprecedented dangers. Out of thousands of avian species, marine birds have become the most threatened group on Earth.
