NYC Good News

Strawberry delight is a timeless dessert that often appears at church potlucks, family get-togethers, and springtime celebrations—and it’s easy to see why. Featuring a rich graham cracker base, a smooth and creamy cheesecake-style layer, and a glossy strawberry topping, this no-bake treat is both simple and irresistible.

In this recipe, strawberry gelatin serves two purposes: it gives the dessert its bright pink hue and sweet berry flavor, while also coating the fresh strawberries on top with a shiny glaze. After chilling, the dessert sets into a light, creamy, and perfectly sliceable dish that’s ideal for warm-weather gatherings or whenever you’re craving something sweet and nostalgic.

Can you use frozen strawberries?

Fresh strawberries are the top choice for both taste and appearance. However, frozen sliced strawberries can be used if needed. Just make sure to thaw them completely and drain off any excess liquid to prevent the topping from becoming watery.

Strawberry delight vs. strawberry pretzel salad

While these two desserts share similarities, the base is what makes them different. Strawberry pretzel salad features a salty, crunchy pretzel crust, whereas strawberry delight uses a sweeter graham cracker crust. Additionally, strawberry delight includes an extra layer of strawberry-flavored cream cheese filling for added richness.

Can it be prepared in advance?

Yes, this dessert is perfect for making ahead since it needs time to chill and firm up. You can prepare the crust and store it in the freezer for up to two days before assembling. Once fully assembled, refrigerate the dessert for at least 4 hours or up to a full day. If chilling longer than 4 hours, cover it with plastic wrap to prevent it from absorbing odors from other foods.

Instructions

Prepare the crust:
Place graham crackers and brown sugar in a food processor and blend until finely crushed, about 1 minute. With the processor running, slowly add melted butter and continue mixing until the texture resembles coarse crumbs.

Form the base:
Lightly grease a 9×9-inch baking dish. Transfer the crumb mixture into the dish and press it firmly into an even layer using the bottom of a measuring cup. Freeze for at least 20 minutes (or up to 2 days).

Whip the cream:
In a stand mixer, beat the heavy cream on medium-high speed until stiff peaks form, about 3 minutes. Transfer to a separate bowl.

Make the filling:
In the same mixing bowl, combine cream cheese, powdered sugar, and vanilla. Beat until smooth and fluffy, about 3 minutes. Stir in one-third of the whipped cream, then gently fold in the remaining cream using a spatula. Spread half of this mixture evenly over the chilled crust.

Prepare the gelatin:
In a bowl, mix strawberry gelatin with 1/2 cup boiling water, stirring until fully dissolved (about 2 minutes).

Create the strawberry layer:
Add about one-third cup of the dissolved gelatin to the remaining cream cheese mixture and mix well. Spread this over the first layer.

Add the topping:
Coat sliced strawberries in the remaining gelatin mixture, then spread them evenly over the top.

Chill and set:
Refrigerate the dessert for at least 4 hours (up to 12 hours) until firm. If chilling for an extended time, cover the dish to keep it fresh.

Enjoy this creamy, fruity dessert that’s as beautiful as it is delicious!
